From the roastery
Whole cherries from smallholder farms around Hambela are dried for about three weeks on raised beds and turned by hand through the day. Careful drying keeps the fruit clean and juicy rather than boozy.
Tasting notes: Blueberry, strawberry jam and cocoa nib.
Roasted for filter: start with 15 g of coffee to 250 g of water just off the boil.
