Pink Bourbon is a pale-fruited variety prized in southern Huila. This lot rested for 40 hours as cherry before pulping, then had a long dry fermentation that brings out a silky, floral sweetness.
Tasting notes: Watermelon, rose and panela.
Roasted for filter: start with 15 g of coffee to 250 g of water just off the boil.
